Foie gras tart with perigord truffle passion fruit jelly and vin cotto paint

Crispy skin chicken breast lined with perigord truffle morel mushrooms, chanterelle mushrooms, baby carrots roasted in duck fat, pickled baby red onion, pomme puree and truffle jus

Spring pea, prosciutto, lobster sphere, sturgeon caviar and perigord truffle salad butter milk snow

Dark chocolate globe with white chocolate and perigord truffle truffle, mini perigord truffle ice cream cone, and strawberry, pistachio, and perigord truffle mousse
