Orecchetti with Rapini

ORECCHIETTE CON RAPINI   

 INGREDIENTS:      SERVES  4-6

 

500 g                           Orecchiette  (pasta)

1 Kg.                            Rapini

¾ cup                          Olive oil

4 cloves                       Garlic – finely chopped

4 fillets                         Anchovies

1 slice                          Italian bread  (white part only)

to taste                        Chili peppers

to taste                        Salt & pepper

 

METHOD:

Clean the rapini, wash well and drain.  Cut the larger stalks in half.  Bring a large pot of water to the boil, add salt and the rapini.  Cook until tender and remove from water.  Allow water to come to the boil again and add the pasta.  Cook pasta al dente, drain and combine the pasta with the rapini.  Pour sauce (recipe to follow) over top,  sprinkle with pepper, toss and serve.

SAUCE:

In a frying pan heat the olive oil, add the anchovies and cook for 1 minute.  Add the garlic, chili peppers and bread cut in bite size pieces.  Cook until bread is light golden in color.  Sauce is now ready to use.
