Panettone French Toast

Serves 4
Ingredients
3 | Eggs |
1/3 cup | Cream |
1/3 cup | Milk |
2 tbsp | Sugar |
1/2 tsp | Vanilla extract |
2 x 1.5cm-thick rounds | Panettone - cut across horizontally, quartered |
1/4 tsp | Cinnamon (optional) |
40g | Unsalted butter |
250g | Fresh berries |
2 tbsp | Icing Sugar |
Directions
- In a wide shallow bowl, beat eggs, cream, milk, sugar, vanilla, and cinnamon. Add the panettone, turn to coat and press down to ensure the panettone soaks up the batter.
- Heat half the butter in a non-stick frying pan over medium heat. Drain excess egg mixture from half of the panettone slices and cook for 1-2 minutes each side until golden brown. Keep warm while you repeat with remaining butter and panettone.
- Serve dusted with icing sugar and topped with fresh fruit.
