Tiramisu with Limoncello & White Chocolate

Prep Time: 20 minutes + 8 hours in refrigerator      Serves 12


500g (2 pkgs.) Vincenzi Lady Fingers
800ml Whipping Cream
250ml Mascarpone
1/2 cup Luxardo Limoncello
1 cup Sugar
1 1/2 cup Water
8 oz White Chocolate - chopped
Garnish Fresh Raspberries (optional)
Garnish White Chocolate - chopped (optional)


Mix the water with 1/2 cup of the sugar and limoncello.  Set aside.  Place the mascarpone in a large bowl and soften with a spoon.  Whip cream until stiff.  Add 1/2 cup sugar to the mascarpone and stir.  Fold in the whipped cream and mix until smooth and creamy.  Add chopped chocolate and mix until just incorporated.  Fillinig is now ready to use.  

Begin to assemble the tiramisu by dipping the lady fingers one at a time in the limoncello mixture.  Form a layer of ladyfingers at the bottom of a 9 x 13 inch dish.  Dip the lady fingers quickly to prevent over soaking.  Repeat with another layer of ladyfingers and top with the remaining cream.  Finish by smoothing the top and cover with plastic wrap.  Refrigerate for at least 8 hours before serving.  Serve garnished with fresh raspberries & white chocolate.
